1/2 C butter, melted
1 c. mashed potatoes
1 cup potato water
1 T. active dry yeast
1/4 c sugar
1 tsp salt
2 eggs
6 c bread flour, (about)
Melt butter in saucepan. In large bowl add mashed potatoes, potato water, and melted butter. Mix and let set until lukewarm (115-120 degrees on a candy therm)
Add yeast, sugar, salt , and eggs to mixture. Stir well. Stir in 2 cups bread flour and let sit 15 mins in warm place. Stir down sponge and add enough flour to make a soft dough (the remaining 4 cups, or more)
Turn dough out onto floured board and knead until soft and smooth. Put dough in greased bowl. Cover and let rise for 1 hour or until double in size. Punch dough down. Turn out onto lightly floured board and knead out air bubbles. Divide and shape into rolls. (about 18) Put rolls on greased baking sheets. cover and let rise 30 mins or until doubled. Bake at 350 deg. for about 15 mins, until golden, but watch so you don't overcook!
