Pumpkin Chocolate Chip Cookies

My all time favorite cookie!

5 C Flour
1 C Oats
2 tsp bkg soda
2 tsp cinnamon
1 tsp salt
1 & 1/2 Cups Butter, softened
1 C sugar
1 egg
1 tsp vanilla
1 can (small, 15oz) Pumpkin
1 bag semi sweet choc chips

Combine Flour, oats, soda, cinnamon, salt- mix well and set aside. Cream butter and sugar. Add egg & vanilla. Alternate adding the dry ingredients(flour mixture) with the pumpkin. I do like a 1/3 of the flour, mix, then half a can of pumpkin, mix, then another third of flour, mix, then rest of pumpkin, mix, then rest of flour. It makes it blend altogether better. Finally add chocolate chips. Bake at 325 for 10-15 mins. Watch them. Dont overcook! These cookies are better the second day, they get SO soft in a Ziploc baggie. This recipe makes a ton. Feel free to half it!
